The first time I tried an avocado I couldn't believe how nasty I thought it was! Couldn't spit it out fast enough.
Fast forward to 1993... I was working in this super-cool authentic Mexican restaurant in the West Village called Mi Cocina where they made their guacamole fresh and to-order. The rest is history: it was Love At First Bite. Baby, I was hooked!

The "Real Deal" Guac
Here's What You Need:
3 to 4 ripe avocados, preferably Haas (they will still be firm, but will give easily when pressed)
a half of a ripe lime (the smoother the skin the better)
juice from a wedge of lemon
a half-clove garlic, minced (optional)
half of a small shallot, minced (optional)
half of a small jalapeÃ±o, minced (save a few seeds for heat!)
About a dozen fresh cilantro leaves
Himalayan sea salt and white pepper to taste
Halve and pit the avocados. Using a knife, score each half with cuts like shown below:
Scoop out each avocado into a bowl. Grab a potato masher (or a fork) and smash the avocado. Add the rest of the ingredients and mix until everything is incorporated. It will be chunky (the chunkier, the better!) Scrape into a serving bowl, make sure you save some for others to eat, too.
