Fast forward to 1993... I was working in a tiny but super-cool authentic Mexican restaurant in the West Village called Mi Cocina where they made their guacamole fresh and to-order. Well, the rest is history: it was Love At First Bite. Maybe even Lust At First Bite. Baby, I was hooked!
Now, everybody loves a dip. We were made to dip. Even toddlers know this: they love dipping! And what is guacamole: it's a dip! A grown-up-succulent-nutrient-bomb dip!
Of course, it doesn't have to be "just" a dip. Spread it on your burgers, eggs...whatever! The point is, it's so darned good, you'll want to eat it on everything. Hey...even my Mom loves this guac...and she used to be a bona-fide guac-hater...just sayin'!
3 to 4 ripe avocados, preferably Haas (they will still be firm, but will give easily when pressed)
a half of a ripe lime (the smoother the skin the better)
juice from a wedge of lemon
a half-clove garlic, minced (optional)
half of a small shallot, minced (optional)
half of a small jalapeÃ±o, minced (save a few seeds for heat!)
About a dozen fresh cilantro leaves
Himalayan sea salt and white pepper to taste
Halve and pit the avocados. Using a knife, score each half with cuts like shown below:
Seriously, that's it!
Side note: I recently got turned on to Beanfield's Bean & Rice Chips -- the Sea Salt & Pepper ones...oooooh, baby! These are goooood with this guac if you want a chip but don't want the corn. The black pepper gives you even more zip! Unfortunately, beans are not Paleo-friendly, though :(...
